I bought a really neat Iron Skillet and it has the grill indention's in it,?
I'm wondering can I cook with in it as if it was just a flat surface iron skillet?
Also it came seasoned so when I make chicken breast tonite do I just put oil in it and put it on medium heat to cook it? How do you stop it from smoking up the house when using it?

You should scrub it thoroughly with a scrub-brush, hot water and salt to get the factory gunk off of it. Avoid using soap! Let dry thoroughly, heat it up slowly on the stove, wad up a Paper Towel and pour a small amount of vegetable oil onto the towel. Do not use Pam - it leaves a sticky gunky residue. Use tongs to swipe the oil-soaked towel all over the cooking surface of the skillet. Flick a few droplets of water onto the skillet; it they dance and sizzle, the skillet is ready for the food. Add the chicken and don't even think about turning it for at least 3 minutes - you need time for the meat to caramelize and get grill-marks. You may have to adjust the heat a few times because it's not hot enough or it's smoking but you'll get the hang of it. Good luck! Let me know when dinner's ready!
