How do I reseason an antique dutch oven?
My antique dutch oven has a rancid smell when it heats up. Is there a way to completely remove the seasoning and start fresh with such an old pot? I have cooked stew in it and it had the same rancid smell to it. Yuk. I don't know what it might have been used for in the past, and I just don't want to spend hundreds of dollars on a new le creuset dutch oven when this one might work just as well.
Wash it in very hot soapy water, and scrub it really well with steel wool. Something like SOS, that way you get soap with the steel wool. After you finishing cleaning the pan, re-season it.
Season the clean oven by getting it as hot as you can stand to touch, then wipe all the surfaces with a thin coat of melted shortening or thin vegetable oil using a Paper Towel. Coat both the inside and the outside. Make sure you treat the lid too. It should be glossy - not dripping.
Then heat the oven until the shortening becomes a hard, varnish-like finish (do not burn it). You can do this in your oven at 350 degrees. Expect some smoke. Allow the dutch oven to cool normally (never splash or immerse a dutch oven with water to cool it off!).
