How to make a crispy French Fry from the OVEN?
So, I have some potatoes that I want to transform into FRENCH FRIES. Now, I don't have a Deep Fryer, so it has to be an oven recipe. I want it to be crispy, without too much seasoning. Is there a trick to make them crispier? Like putting them in sugar water or in the refrigerator or what? HELP!
Here is a trick I use. Fill a small wide bowl with canola oil part way. Maybe 1/2". I put garlic granules, black pepper and salt in it. I then clean my potatoes, and either keep the skins on or peel them off, either way. I have a large Pizza Pan I bought a long time ago from Little Ceasars I use for this. It is the large, family size and is excellent for making oven baked french fries., aluminum and not tefloned of course! If you cannot find this in your store kitchen section, go to a local pizza joint and ask if you can buy one from them.
I dunk the freshly cut fries into my oil in the dish, then tap all the extra oil off and place them, one french fry at a time on the pizza pan. Heck, I can never get enough oil off, but so what? Use a paper towl if a small pool of oil accumulates to mop it up before putting into the oven. I make BIG succulent fries so I have to have big Idaho's for this - bigger than steak fries
In the mean time, in your oven, move the upper tray to the TOP MOST level because heat rises and that means that food sitting towards the top of the oven gets done quicker and also crisps up better. I use a full 450 F and I preheat the oven nice and hot so that when those fries hit the oven, its darn hot and they quickly brown. Open the oven several times during baking and inspect so they don't burn - it will happen quicker than you think!
In the mean time, have a large serving bowl with paper towls in it. Remove the pan from the oven, careful! Its HOT!
With tongs, pick the fries up quickly and throw them in the basket and then pat the fries for extra oil. They should be golden brown, crispy and crunchy on the outside, moist, firm and tender on the inside and perfect for eating. Eat IMMEDIATELY! These fries will soften as they cool so its important to eat them hot.
This means that you should do this last after any other cooking, like making steak with it or burgers, you want to time it so the burgers, steak or chops are cooked at just about the time the fries are done.
